Midweek meals
Like many of you I’m sure, I work full time and sometimes it can be difficult to ensure my family are eating nutritious, tasty meals. The time available to prep and cook an evening meal is often minimal, but I try to get appealing food on the table as often as I can. This week I made a really quick and easy supper with Schwartz seasonings.
Let’s pause here for a debate on what you call your evening meal. Some days I say tea, some days I say dinner, and every so often I say supper. Depends who I’m feeding, what time we are eating and where we are eating. Supper for us is eaten slightly later than tea or dinner. It’s wholesome, comforting food – perfect for an informal meal in front of the TV.
Anyway, I was lucky enough to be offered the chance to sample some Schwartz seasoning. I was already a fan and use Schwartz products quite regularly in my family dishes. This one is Cajun, Taste of Louisiana. Sounds good, right? Although I have a million and one recipe books (maybe ever so slightly an exaggeration), I decided to just throw some ingredients together and see what happened.
Here’s what happened:
Step One – Heat a splash of olive oil in a large non-stick wok on a medium heat.

Tip: don’t let the oil overheat before adding ingredients
Step Two – Prepare your rice. I’m lucky enough to have a rice cooker and it’s the easiest gadget ever. Stick the rice in, add water, put the lid on and let it do it’s thing. It even has a “keep warm” function, so if the rice is ready first, it stays hot.

Step Three – Add chunks of pre-cooked chicken to the wok and sprinkle in a couple of tablespoons of Schwartz Cajun seasoning. I did this by eye, but the flavour is quite intense, so you don’t need tons. Adjust to taste, obviously.


Step Four – add a selection of frozen vegetables, stir and cook for 5-10 minutes. I keep ready chopped veg in my freezer; I find it quick and convenient when time is short and days have been long. Here, I tipped in onions, peppers and peas. These are staple favourites. There aren’t many meals that can’t be spruced up by chucking in a handful of peppers.

Step Five – add a big squirt of tomato puree to taste, stirring into the chicken and vegetables.

Step Six – add a stock pot, stir and simmer for about 10 minutes. I chose vegetable stock but chicken would have also worked.

Step Seven – serve and enjoy! How easy was that? So straightforward and it tasted as good as it looked.


The Verdict:
This was a massive hit! Everyone loved it and this meal will go straight into my regular meal plans, filed under “delicious and easy”.
